Grapes: Chardonnay 100%
Production area: 8 hectares.
Type of land: Morainic terrestrial grounds with presence of skeleton.
Systematizes of breeding: Guyot.
Density plant: 4.500 fetterses per hectare.
Made per hectare: 90 quintals.
Harvest period: End of August.
Grapes: Manually picked grapes with selection of the clusters, 80% of grapes soft pressing in press pneumatic, or fermentation in steel at checked temperature. The remaining 20% fermentation in new e first passage barriques.
Finement: 7 months in steel and in barriques.
Second fermentation: during spring after harvest.
Refinement on the yeasts: at least 26 months.
Limited production: 15.000 bottles.
Organoleptic characteristics: the wine has a pale straw yellow color, fine and persistent perlage.
Combinings: excellent with fish dishes, white meat and vegetables.
