The wines and the cellar
The wine cellar is right at the center of the vineyards and equipped with cutting edge machinery.
Our vinification makes use of modern techniques of cold maceration, temperature control in all phases of production and the use of inert gas to accentuate the aromas and finesse of the wine. Our research, which is both scientific and sensorial, endeavours to combine the organoleptic characteristics of our wines with the natural elements of the region, celebrating the colors, its rarified winter atmosphere, its summer sun, because everything is already written in the land!
Our vine growing methodology ensures a proper soil preparation and vines pruning in an environmentally friendly way to meet the target quality. Perfectly ripe grapes are carefully selected and hand picked; this and the low volume production ensures the superior quality of the grapes which are soft pressed so that only free-run juice is extracted.
Special care is taken during yeast aging, always maintaining a constant temperature of 15°.
The company abides by all legal requirements to reduce environmental impact and makes use of the clean energy of the sun. Our arm is to produce our wine with precision, based on constantly updated agronomical and oenological techniques.
